Irish mashed potatoes with sauteed cabbage, green onions and bacon!
Colcannon is an Irish type of mashed potato mixed with cabbage; common ingredients are potatoes, cabbage, milk, and butter. Mashed potatoes are quite ordinary potatoes, peeled and diced, cooked until tender before being mashed and mixing milk and butter. You can cook the cabbage any way you like and I like to sauté it in bacon fat, which allows me to add bacon to the dish! In addition to kale, I like to add green onions that are cut finely, skipping the whites with cabbage and mixing the greens into mashed potatoes at the end. As with any mashed potatoes, you can easily change the basic recipe and add other ingredients/flavors as you wish! No matter how you prepare the Colcannon, this is a great site for so many meals, especially a corned Beef dinner for St. Patrick’s Day!
Irish mashed potatoes with sauteed cabbage, green onions and bacon!
Ingredient
- 2 pounds potatoes, peeled and cut into 1/2-inch cubes
- 4 slices bacon, cut into 1-inch slices (optional)
- 1/4 head of a small cabbage, thinly sliced
- 4 green onions, sliced and divided
- 1/3 cup milk and/or cream
- 2 tablespoons melted butter
- salt and pepper to taste
Direction
Place the potatoes in a large saucepan, cover with water, bring to a boil and cook until the potatoes are very tender, about 15-20 minutes.
Meanwhile, cook the bacon in another large skillet over medium heat for about 3-5 minutes and set aside, keeping 2 tablespoons of fat in the pan.
Add the cabbage and the whites of the green onions and fry in the bacon fat for about 10 minutes until soft before setting aside.
Drain the potatoes and mash them in a large bowl.
Mix the Butter and Milk into the Mashed potatoes.
Add bacon, cabbage and greens from green onions to the mashed potatoes and season with salt and pepper.
- Option: Leave the bacon and fry the cabbage in 2 tablespoons of butter.
- Option: replace the cabbage with kale.
- Option: Replace green onions with leeks.
- Option: add 2+ whole garlic cloves to the potatoes during cooking and mash them together with the potatoes.
- Option: add 1 tablespoon of white Miso paste with the butter and milk!
- Option: add a splash of apple cider vinegar or malt vinegar at the end!
