A simple egg casserole with all the flavors of pepperoni pizza; Pizza for breakfast!
Egg casseroles are super easy to make and are great for breakfast (or even dinner) and this chili pizza casserole is one of my favorites! The basics behind the egg casserole are the egg and dairy mixture that hardens during cooking, and I like to go with cottage cheese for dairy in mine. In addition to eggs and cottage cheese, there is Mozzarella, pepperoni, sliced mushrooms, sliced olives, and a pinch of oregano, half of which is mixed into the eggs, and the rest is sprinkled like a Pizza. After baking, I like to serve this chilli Pizza egg casserole with a little hot pizza sauce and any leftovers nicely in the fridge for a quick breakfast the next day!

Ingredient
- 1 tablespoon Of oil
- 8 ounces mushrooms, sliced
- 10 eggs
- 1 cup cottage cheese
- 1 cup Mozzarella
- 1 ounce chilli
- 1/4 cup Sliced black olives
- 1 pinch Of oregano
Direction
Heat the oil in a frying pan over medium heat, add the mushrooms and cook until lightly browned for about 10 minutes before letting them cool.
Mix eggs, cottage cheese, and half of each of the Mozzarella, Mushrooms, chili peppers, olives and oregano.
Pour the mixture into a baking dish (10-inch cast iron skillet or an 8×13-inch rectangular skillet), sprinkle the remaining Mozzarella, followed by the rest of the mushrooms, chili, olives and oregano.
Bake in a preheated 375F/190C oven until the eggs have set and the top is a light golden brown, about 20 minutes.
- Option: replace cottage cheese with Ricotta.
- Option: add 2 tablespoons of Parmesan cheese!
- Option: Use Your Favorite Pizza Toppings!
- Option: serve with hot pizza sauce.
