A simple heartwarming soup with dill pickles!
Dill pickles are one of my favorite foods and although I usually use them as a side dish, side dish or side dish, they are also fabulous as the star of the show, as in this dill pickle soup! This is a fairly simple vegetable soup with onions, celery, carrots, and potatoes in addition to the diced dill pickles. The taste of the dill pickle is increased a little by using a portion of the cucumber brine (from the pot) in the broth with a dash of fresh (or dried) dill grass! I make a few different versions of this soup, some with a clear and fine broth and others with a slightly thickened broth with flour and others with a creamy broth by adding sour cream. I also like to change things up by adding meat like bacon, ham or kielbasa!

Ingredient
- 2 Tablespoons of butter
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced Celery
- 2 chopped garlic cloves
- 4 cups vegetable broth or chicken broth
- 1/2 cup cucumber brine (from the Pot) (Optional)
- 1 Pound Potatoes (~2 medium potatoes), 1/2 inch diced
- 2 Cups dill pickles, diced
- 1/2 cup sour cream (Optional)
- 2 Tablespoons Flour (Optional) (Gluten-free for gluten-free)
- 2 Tablespoons of fresh dill, chopped (or 2 teaspoons of dried dill)
- Salt and pepper to taste
Direction
Melt the butter in a large saucepan over medium heat, add the onions, carrots and celery and cook for about 7 to 10 minutes.
Stir the garlic and cook until fragrant, about 30 seconds.
Add the broth, brine and potatoes, bring to a boil, reduce the heat and simmer until the potatoes are soft, about 10-15 minutes.
Add the dill pickles and heat, about 3-5 minutes.
Mix the sour cream and flour into the soup before mixing and simmer until it thickens, about 3-5 minutes.
Remove from heat, stir in dill and season with salt and pepper before they taste!
- Option: Add a pinch of cayenne for a little spicy heat!
- Option: sour cream will give the soup creaminess and can be omitted if you prefer a lighter broth!
- Option: Flour acts as a thickener and if you want a finer, bubbly soup, leave it out or use less, and if you want a thicker soup, add more.
